Greg’s Famous Chicken Rub Recipe
· 2 Tblsps. Nutmeg
· 2 Tblsp. Paprika
· 1 Tblsp. Onion Powder
· 1 Tblsp. All Nat. Sea Salt or RealSalt
· 2 Tsps. Oregano
· 1 Tsp. Garlic Powder
· 1 Tsp. Mustard Powder
· 1 Tsp. White Pepper
· 1 Tsp. Black Pepper (a little more if its course)
· 1 Tsp. Basil
· Dash of All spice
· Dash of Cinnamon
· Dash of Red Pepper or Cayenne Powder
· Dash of Tumeric
· 2 Hands of Parsley Flakes (ground between hands as you mix it in to other ingredients)
· ½ Cup Grape Seed Oil
· ½ Cup Olive Oil
· Juice of 2 Large Lemons (or 3 small ones)
· Butter (For brushing on meat when it comes off the grill)
Mix all Dry ingredients together in a bowl and stir until thoroughly mixed together. I personally use a small whisk. Then mix in the oil and lemon juice into the dry ingredients until thoroughly mixed. Use as rub on chicken and let sit as long as you desire and then grill or barbecue. For really long slow smoked meats, I’ve used it only as a dry rub too, but then apply the lemon to the chicken before the dry rub.
Heat the Butter in a small bowl on the grill and brush butter on Chicken right before it comes off the grill when it’s done. Personally, depending on how much butter is in the refrigerator, I sometimes coat the meat when it’s cooking also.
